In the Valle dei Laghi, the art of distillation has deep roots: it has been practiced since the 1500s and is still very much alive today in Santa Massenza, a tiny village that is home to no fewer than five active distilleries. A surprising number, considering the village has just over a hundred residents!
What sets grappa apart from other spirits is first and foremost the raw material: real Trentino grappa is made exclusively from pomace, the skins, seeds and stems left over after winemaking.
