The Don Pedro appetizer, with homemade raw salted meat, porcini mushrooms in oil and 24-month flakes of Grana Trentino, is already a good reason to sit down at this table, but it is perhaps with Girovalle that you really savour the soul of Trentino cuisine: a selection of the best cured meats and cheeses in this valley, depending on the season, perhaps accompanied by a glass of local wine. For lovers of soups, don't miss the barley one, with the cook's secret recipe, the one with ten seasonal vegetables and the rustic one with beans. Among the first, the "Storo Gold Nuggets", or polenta dumplings whipped with gorgonzola cream, the Don Pedro dumplings, with luganega potatoes, leeks and a drop of cream, and the pappardelle alla boscaiola sautéed with porcini mushrooms and roast sauce are not to be missed.
