A tasting dinner featuring Nosiola, Vino Santo and unexpected pairings
A journey through flavour where the great wines of the Valle dei Laghi meet surprising and unconventional combinations.
During this special tasting dinner, Nosiola and Vino Santo will be paired with creative bites prepared using local products from Trentino and seafood ingredients from the Valli di Comacchio.
Will it be a dangerous relationship?
Or love at first sip and first bite?
You’ll be guided by sommelier André Senoner and chef Fiorenzo Varesco, member of the Slow Food Alliance, for an evening that blends storytelling, tasting and discovery.
The experience concludes with a tasting of Nosiola and Vino Santo grappa, paired with the “food of the gods” – chocolate.

A journey between sea and mountains, featuring selected products and dedicated wine pairings.
Starters
• Seafood crudités with fresh catch from the Fishermen of Porto Garibaldi, paired with Vino Santo Francesco Poli (2007).
• Marinated mountain mutton tartare from Val di Fiemme served on watercress blinis, paired with Nosiola Giovanni Poli (2025).
First course
• Vialone Nano rice from Grumolo delle Abbadesse (Slow Food Presidio) risotto with S. Massenza broccoli and gratinated Pink Oyster from Cardovari, paired with Vino Santo Maxentia 2023.
Main course
• Wild pheasant scented with thyme on a polenta crouton with morel mushrooms (Morchella esculenta), paired with L’Ora di Pravis 2023.
Dessert
• Spoonable Gorgonzola in filo pastry with zucchini mostarda, paired with Nosiola macerata Gino Pedrotti.
• Chocolate “Tenerina” cake with chilli pepper and panpepato spices, paired with Vino Santo F.lli Pisoni 1986.
