Peel and core 3 apples, cut into slices lengthways and stew in a pot with the butter and two spoonfuls of sugar until they are soft. Let the apples cool and mix in the plum jam and pinch of cinnamon. Beat 4 egg whites, add two spoonfuls of sugar and beat the egg whites into stiff peaks. Add the cold apple mixture, folding it in gently to make a thick cream. Butter the moulds, if possible using ones made of terracotta, and cover the base with crushed biscuits. Pour the mixture on top, cover with greaseproof paper and bake in the oven for at least one hour at a maximum temperature of 150 degrees.Take the moulds out of the oven, turn the flans out onto a plate and serve with fresh crushed raspberries drizzled with dandelion honey and a scoop of plain icecream. Serve the flans warm.
