Violet potato is a special kind of potato, which adapts itself to the climate and the peculiarities of Trentino region. It was cultivated in Valle di Ledro and in the whole Trentino region because it survives the cold and rigid winters. In the past, with this variety of potato the people of Valle di Ledro used to prepare the famous potato's polenta, soups and dumplings.
is an initiative promoted by the Tourist Board Valle di Ledro together with some restaurants in order to let our guests discover the flavors of our cuisine and the dishes prepared by our chefs using local products.
Restaurateurs who join, assures a homely and quality cooking, in addition to the use of products of Valle di Ledro and Trentino.
There are four different variants of Menu Ledro, that are proposed in three distinct periods of the year: during spring time you can taste the flavors of the saffron; Autumn is the time of the purple potato. Finally, at the beginning of November, we propose Bohemian dishes that became part of our culinary tradition from the postwar period.
